Windshield moldings are primarily decorative, covering the gap between the glass and vehicle body. The do also help to prevent water, moisture, dirt & debris from getting into this gap which can help keep things sealed up. Keep in mind, a windshield molding is different than a windshield seal. Windshield moldings are typically used when the glass is glued in and are more decorative while a windshield seal not only seals the glass to the body but holds the glass in. Some vehicles, especially older cars and trucks have both a windshield seal and a decorative molding.
